Directions

Place hummus and cheeses on large board or platter. Fill in empty spaces with vegetables, peaches, crackers and snacks. Add basil leaves for more color, and a small bowl of nuts for flavor and crunch.

 

This Summer's Abundance Board can be tailored to fit any number of servings, depending on the size of your gathering. Use a guideline of 2 Tbsp. hummus, and 1 oz. EACH cheese, and crackers or snacks per serving. For a well-balanced board, fill in empty spaces with fresh vegetables and fruit. For the 10 servings shown here, figure on purchasing a 10-oz. container of hummus and 10 oz. of cheese (total weight of both cheeses). Be sure to have plenty of crackers, snacks, vegetables and peaches on hand.

 

Tips Substitute: Prepare using your favorite seasonal fresh vegetables and/or fruit. You should plan on having a total of 4 cups cut-up fresh vegetables and 3 cups cut-up fresh fruit on hand to arrange on the board. Nuts: While nuts can add great crunch and flavor to any snacking board, they should be eaten in moderation. Feel free to substitute other nuts for the pistachios. A small bowl of nuts is all you need.
